SAINT PURE SALMON

SAINT Pure Salmon is hand-crafted in our new ‘AA’ BRC accredited facility in Miami using fresh (never frozen) Atlantic salmon (ASC certified upon request). We hand-cure with only sea salt & brown sugar and gently smoked using locally sourced, re-claimed orange & grapefruit woods from Florida citrus growers. The use of these citrus woods characterizes the salmon with a light fruit wood smoke flavor. SAINT Pure Salmon is creative ‘haute cuisine’ - an artful and elaborate product that encapsulates premium quality and innovation.

Our SAINT Pure Salmon retail and wholesale presentations are custom made to order and available in two of our slice profiles. Each visually distinctive slice profile not only allows for creative serving suggestions, but also brings its own unique taste and texture.

Vertical - Sashimi Cut

The smoked salmon fillet is precision cut perpendicular to the direction of the spine cutting the flesh across the grain.

Diagonal - D Cut

The smoked salmon is sliced diagonally at a shallow angle through the fillet creating a D-shaped slice.
