Avocado and Smoked Salmon Toast

This avocado and smoked salmon toast is the perfect way to start your day! Packed with healthy fats and protein, it will keep you feeling satisfied all morning long.

INGREDIENTS

  • 2 avocados
  • 2 slices of artisanal bread
  • 1 4oz pack of St. James Smokehouse NORDIC RESERVE smoked salmon
  • 1 lemon
  • Olive oil
  • Crushed pepper
  • Salt

Instructions

  1. Cut the avocados in half, remove the seed and scoop the flesh into a bowl.
  2. Add some lemon juice, and using a fork, mash the avocados into a creamy paste.
  3. Toast your bread slices. Make sure they are well toasted, as you'll need a sturdy base for the avocado.
  4. Scoop onto the toast a generous portion of avocado paste adn spread evenly.
  5. Drizzle the pieces of avocado toast with olive oil.
  6. Open your smoked salmon and roll the slices into flower shaped portions.
  7. Place the smoked salmon flowers onto the slices, spacing them out evenly.
  8. Sprinkle with crush pepper and serve right away.
