Using only the finest Sustainable Scottish Salmon, we hand cure each fillet with a blend of pure sea salt and Demerara sugar - then we naturally cold smoke the salmon over smouldering oak chippings. Each smoked salmon fillet is fully trimmed by hand and vacuum sealed to capture that "Fresh Out The Smoker" taste. The Guild was formed in 1995 with a mission to create close links between supplier's retailers and wholesalers throughout the UK. Through its unique membership database of accredited suppliers, it identifies thousands of specialty food lines available to the retail & wholesale sector.
What are the Guild of Fine Food Great Taste Awards?
The GTA's as they are known, organized by the Guild of Fine food, is the acknowledged benchmark for specialty food and drink. It has been described as the 'Oscars' of the fine food world and the epicurean equivalent of the Booker prize. Quite simply the GTA logo is the sign you can trust when buying food and drink in your local, quality retailer.
How are they judged?
Producers enter their foods which are judged by at least three different judging panels. This year over 6000 products were entered. All the tasting is blind and our judges (there are over 300 per year) are fine food retailers, chefs, restaurants critics, food writers and other industry experts.
In February 2011, St. James Smokehouse exhibited at the Gulfood 2011 Show in Dubai, for the very first time. We are delighted and proud to announce that out of 3,500 vendors attending the show, St. James Scotch Reserve was crowned 'BEST CHILLED or FROZEN FOOD' at the World's Biggest Annual Food & Hospitality Event - GULFOOD 2011, Dubai.

What is the Monde Selection, International Institute for Quality Selections?
Based in Belgium, the Monde Selection, International Institute for Quality Selections has been developing for nearly 50 years now a unique expertise to test and analyse consumer goods from all over the world to grant them an internationally renowned quality award.
What are the Monde Selection Quality Awards?
The award is a guarantee of quality to the consumer as it assures that the product he intends to buy has been tested and approved by a totally independent professional jury. More than 70 professionals, Michelin starred chefs, members of the French Culinary Academy, university lecturers, nutrition and health consultants, chemical engineers, famous oenologists and master sommeliers grant every year these prestigious quality awards.
How are they judged?
Over a 4 month period, the Institute calls upon more than 70 internationally renowned experts to evaluate the quality of the submitted products. Each quality selection has its own experienced jury. Judges evaluate the product by filling in individual evaluation forms with up to 20 different parameters. Scores are then added up and averaged to a final result and rewarded with a bronze, silver, gold or grand gold quality award.
In 2013, St James Smokehouse was proud to achieve further success at the Scotland Food and Drink Excellence Awards, winning in the Export Business of the Year category and being named Scotland Business of the Year for the second time.
